Quinoa Fried Rice & Salmon


This morning I had an intense workout, felt so good but it all went downhill when hubby and I decided to stop by our fav. burger joint right after, not a proud moment. Feeling guilty, thought of making something healthy for dinner to make up for the lunch - Quinoa Fried Rice and Salmon. The whole meal took no more than 30 minutes; made it just on time for the game tonight! (Although this is not your typical game food lol - but definitely healthier than your cheesy nachos and wings)
Here is a step by step for all who are reading :)
Cook one cup of quinoa per instructions (2 cups of water or chicken broth) 
While the quinoa is cooking chop all the veggies (Mushrooms/peppers/eggplant-onions & garlic). You can use any vegetables of your choice (broccoli/snap peas/string beans) I only had these in my fridge tonight. 


Once you got your quinoa all cooked and fluffy get a pan and sautee all the veggies with your choice of oil (I used coconut oil but you can use canola or any other type) and a teaspoon of soya sauce (I don't add any salt since the soya sauce is already sodium heavy).


Once everything is cooked, add the cooked quinoa and an egg with a handful of fresh basil - mix until everything is combined.



If you are good at multi-tasking you can get the salmon cooking at the same time you are working the fried rice. I LOVE salmon - it tastes great no matter how you cook it. Salmon can never do any wrong in my books, just make sure it's fresh. Tonight, I just did a simple spice rub of dried parsley, cayenne pepper, black pepper, garlic powder. I added half tea spoon of coconut oil and half tea spoon of olive oil to the pan, make sure your pan is hot when you place your fish on the pan (listen for the 'sizzle') put the fish skin down. I let it cook for about a min or so and added some red peppers, again you can add anything you like. before serving you can take the skin out; or you can leave the skin on as some people like the crunchy chewy salty taste (me). 



Our healthy dinner is ready and the game has started - hoping we make it to the playoffs tonight, go leafs go!
